Indian cuisine has always rested heavily on the usage of flours- especially wheat. It is only now that people are turning their attention to the plethora of grains and millets available in our country. The concept of adding different grains to our diet is age-old as it helps keep your system smooth and makes it open to changes. Blending different grains gives your body access to different nutrients and is a key to good health.

The usage of multiple grains is only now gaining importance but for a country that relies heavily on flour to create the most unique breads somebody should have done this sooner!

How to use:

For roti/ paratha- add 250 gms of multigrain mix to 1 kg atta. This can be customized per your need. For chilla/ dosa - 1 cup multigrain mix atta + 1/4th normal atta + a hint of salt, masala and chopped vegetables. For Halwa: Dry roast I cup multigrain mix atta for 3-4 mins, add 2 tsp ghee, cook on medium to low flame for another 2 minutes. Separately, add ½ cup water and ½ cup sugar/jaggery powder + 1 cup of milk , elaichi pods and cook for 3-4 mins on medium flame. Then add dry fruits to the mix and let it cook for another 2 minutes till the stickiness goes away. For baati- add equal quantity of multigrain mix and wheat atta.
